Collagen is not a single molecule but a structural pattern. Three long amino acid chains wind into a triple helix, rather like a twisted rope. This structure makes collagen fibres resistant to tension without making them rigid.
Almost thirty collagen types are known. Three are of practical importance: type I in skin, bone and tendons, type II in cartilage and type III in stretchable tissue such as vessel walls.
Collagen, gelatine, hydrolysate
The three terms describe the same starting material in three states. Collagen is the intact fibre. Heated, the helix breaks down into gelatine, which dissolves in warm water and gels on cooling. Broken down further into short fragments, it becomes collagen hydrolysate, which also dissolves cold and no longer gels.
What collagen is valued for in your dog's diet
Collagen provides the amino acids glycine, proline and hydroxyproline, from which the body builds its own connective tissue.
