The mushroom comes from the highlands south of São Paulo, where it grows on nutrient-rich pastures. It owes its common name to its smell: when fresh it clearly smells of almonds. Botanically it belongs to the same genus as the cultivated button mushroom.
Today it is grown in controlled cultures, because wild collection would be possible neither in sufficient quantity nor in consistent quality.

Like all mushrooms, Agaricus blazei consists largely of dietary fibre from the cell wall. This includes the beta-glucans mushrooms are known for. It also provides protein, B vitamins and ergosterol, the plant precursor of vitamin D.

Why preparation matters
The cell wall of mushrooms consists of chitin, the same material as the shell of insects. It is very robust, which is why the mushroom is hardly broken down in its raw state.
For complementary feed the mushroom is therefore dried and finely ground. Only this makes the constituents of the cell wall accessible at all. When purchasing we look at the fruiting body itself, not at the substrate it grew on.
