Colostrum » milk that exists only once
Colostrum is not produced continuously but only in the first one to two days after a birth. After that the mother switches to normal milk. This makes colostrum a naturally limited raw material, since only a limited quantity arises per birth.
The difference is visible: colostrum is thicker and a stronger yellow than later milk.
What colostrum contains
Compared with normal milk, colostrum is considerably richer in protein. Characteristic are immunoglobulins, above all IgG, plus lactoferrin, an iron-binding protein, as well as growth factors, vitamins and minerals. The fat and milk sugar content, by contrast, is lower.
Why processing is delicate
The proteins in colostrum are heat-sensitive. Excessive temperatures during drying change their structure without this being visible in the powder. For this reason colostrum is dried gently, usually by freeze-drying or a mild spray process.
The time of collection is also important. Only milk from the first milkings after birth carries the typical composition, later milk no longer does. Both together, harvest time and drying, determine the quality of a batch.
